I love one pot cooking since I’ve never been a fan of washing dishes. Undeniably, there are countless better activities to enjoy rather than tidying up. Soup may be the best one pot dish ever invented, typically brimming with healthy ingredients.
My parents had the most amazing broccoli growing in their garden in central northern BC. Their broccoli tasted like broccoli–green, earthy and heavenly! Store bought broccoli pales in comparison, but when cleverly disguised in broccoli soup, you receive all the nutritional benefits in addition to the savoury flavours of onions, garlic, and spices.
Steamed vegetables can become boring quickly. Homemade soup, however, always feels like a delicious reward. And as we head into Fall, soup never fails to satisfy on a cool autumnal day.
BEAUTIFUL BROCCOLI SOUP
Into the Pot with You!
60 ml butter
2-3 generous heads of broccoli, washed & chopped
30-60 ml flour
4 small chopped white onions
3 cloves chopped garlic
1-2 stems finely chopped celery or 125 ml finely diced zucchini
500 ml vegetable stock
Bunch fresh thyme
Sea Salt & Pepper
Basil leaf and diced green onions for garnish
Blue cheese to sprinkle on top
Stir it all together and voila!
- Melt butter in large soup pot. Saute onions, garlic, celery and zucchini 5 minutes or until softened.
- Whisk in flour until thickened.
- Add broccoli and broth. Bring to a boil and simmer until cooked through, around 10 minutes.
- Season as you wish and puree with a hand blender until smooth and creamy.
- Garnish with basil leaf, green onions, and cheese sprinkles.
